Here is a dish with fresh and citrus notes that will captivate you: lemon risotto.

It is an easy to prepare dish with a very delicate taste, enriched with the final addition of the good Pecorino Fresco Cademartori.

By following these small tricks, you will create a perfect lemon risotto, perfect for the whole family.

To prepare it, first wash the lemon very well under running water, grate the peel and squeeze the juice, taking care to filter it to retain the seeds (better choose organic lemons when grating the peel).

Finely chop the onion and brown it in a saucepan with the butter and a tablespoon of oil, then add the rice and stir to toast it for a few minutes.

As soon as it becomes transparent, lower the heat and add the lemon juice and a ladle of hot broth at a time, waiting for it to be completely absorbed by the rice before adding the next one.

Cook, then turn off the heat and season with salt, add the grated lemon peel and stir in the diced Cademartori Fresh Pecorino. Stir to make it creamy and here is the lemon risotto ready to be served.
